  Vegan Potato Pancakes

Serves 4

Ingredients

  • 1/2 shallot, chopped
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup plant milk (almond, cashew, soy, or rice milk)
  • 1-cup potato flakes
  • 1/2 teaspoon dry dill weed
  • Pinch of cayenne pepper (optional)


Preparation

  1. Dice shallot, then cook for 2-3 minutes in olive oil in sauce pot over medium-high heat. Season with salt & pepper.
  2. Add plant milk and more salt & pepper. Add cayenne pepper if desired.
  3. Bring to boil and turn off heat. Add potato flakes in 1/4 cup batches while mixing continually.
  4. Add dill weed. Mix well. Divide mixture and form patties.
  5. Cook 12 minutes in pan over medium-low heat. Flip patties and cook other side for 4-5 more minutes, until golden brown.
  6. Serve warm with condiment of your choice - I like chipotle ketchup.
