  Grilled Tri Tip w Garlic Balsamic Ghee Drizzle, Rocket Salad

4 tbs steak seasoning on your choice
2 tbs grape seed oil
3 tbs ghee
2 garlic cloves, smashed
2 tbs good balsamic
1 tsp Worcestershire sauce
large bunch arugula
1 tbs fresh squeezed lemon
salt and pepper
1 tsp extra virgin olive oil

  1. Rub meat with 1-1/2 tbs of the oil, then rub on the seasoning blend.
  2. Grill to your liking, allow to cool completely before slicing.
  3. Meanwhile, while meat is resting, in sauce pot over very low heat add ghee and garlic, sizzle for 1 minutes, turn off heat, add vinegar and Worcestershire. Allow to cool.
  4. In large bowl add washed and dried arugula, dress lightly with 1/2 tbs olive oil oil, lemon, salt & pepper, toss with hands.
  5. Slice meat and serve room temp with dressed arugula.

Chef's Note: Shaved parmesan is optional but awesome if you want to bend the Paleo rules a bit.
